Weissburgunder Adamsbergen 2015

The cool climate site “Adamsbergen” was almost forgotten. We re-planted vines there since this meagre soil produces Pinot grapes that unite power and elegance.
 
 

Origin: Adamsbergen (northern slope) | Herrnbaumgarten | Lower Austria.

Soil: Meagre, calcareous virgin soil. Planted with various blooming herbs and clover types to promote biodiversity and soil organisms.

Harvest: Hand picking with strict selection by hand.

Grape processing & vinification: De-stemmed, long maceration (12 h) with moderate must oxidisation. Spontaneous fermentation at room temperature in 600-litre wooden barrels. Left on gross lees until August, then directly racked from the lees and bottled.

Analysis: Alcohol: 13.5 % ABV; residual sugar: 5.8 g/l; acidity: 5.7 g/l

Description: Exotic touch evocative of Hawaiian pineapple, silky, chewy, elegant, full speed ahead. (Vinaria)

Food pairing: Minced veal butter schnitzel, rabbit, dishes with spicy sauces.

Drinking temperature: 10-12°C, large glass

Best age to open: 2017 – 2025.
